{Stove-Top Chicken Casserole}

There’s nothing better than a piping hot home-cooked meal on a cold winter day so I’m sharing the most coveted casserole recipe in our house this time of year.  Anyone that knows Davin knows that one of his favorite foods on this planet is Stove-Top stuffing.  I’m pretty sure he even prefers it over the homemade stuff.  Friggen ridiculous.  I’ve always doubled the recipe if I want it to last more than a meal or two so this will serve about 8-10.


  • 2 packages of Stove-Top stuffing
  • 3-4 boneless chicken breast
  • 2 cans of condensed cream of chicken soup
  • 1 cup of sour cream
  • 2 cups of frozen mixed veggies (thawed)



  • Pre-heat oven to 425 degrees F
  • Cut chicken into bite-sized pieces
  • Mix chicken, mixed veggies, soup & sour cream into large baking dish
  • Prepare stuffing as directed on package
  • Spread cooked Stove-Top stuffing to cover casserole
  • Cook for 40 – 50 minutes or until chicken is cooked through
