{Mint Chocolate Cookies}

I’ve been meaning to share my all-time favorite mint chocolate cookie recipe for a few years now. YEARS! But honest to goodness, each and every time I’ve made them they all disappeared before I ever stood a chance at taking a photo. Obviously no one likes to make a recipe when they can’t see what the finished product looks like. So, alas! Behold the world’s greatest mint chocolate cookie!

I’ve made them every  year at Christmas and they’re always a huge hit. They’re light, not too sweet and a delicacy for anyone that loves mint. Now the family has volun-told me to make them for every family function. Fortunately for them, these are some of my favorite cookies, so I am happy to oblige. Also – Uncle Daren, the recipe was worth the wait…promise!

I’m not even going to tell you to enjoy, because there’s no doubt you will. 😉

Mint Chocolate Cookies

Ingredients:

  • 2-3/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1-1/2 cups sugar
  • 1 egg
  • 1 tsp mint extract
  • 15-20 drops green food coloring
  • 4 mint Aero chocolate bars

Directions:

  • preheat oven to 375 degrees
  • crush the chocolate bars into fine chunks using a mortar and pestle
  • in a large bowl cream together the butter & sugar until smooth
  • beat in the egg, mint extract & food coloring
  • gradually blend in the dry ingredients &  mix until colored evenly
  • add crushed mint chocolate
  • form into balls and flatten before cooking at 375 for 8-10 minutes being careful not to overcook them

Terrai - These look delicious!! when I’m baking Caius’ healthy muffins this weekend, I may have to bake these for the hubs & myself… :))
