Summer might be winding down but it’s certainly not over yet and with this being the hottest summer we’ve had in years, I’m constantly searching for new ways to beat the heat. Naturally, I’ve been craving the delicious lemonade you get at fairs and outdoor markets this time of year, but tweaked so that it can be consumed by the bucket load – so a little less sweet. Actually, I wanted to make lemonade with no sugar so my diabetic hubby and I could indulge in it all we want! Over the long weekend we stocked up on lemons and gave it a go!
We started with a dozen lemons and started by juicing them into a measuring cup. It took about 7 lemons to get one cup of juice, so we started there and this is what we came up with for a refreshing, lip-smacking, (Davin also says hangover-curing), cold summer drink:
- One cup of fresh squeezed lemon juice (approx 6-8 lemons)
- 6 Cups of cold water
- 6 Tablespoons of Splenda (equivalent to just over 1/4 cup)*
*You could also substitue for Xylitol, Stevia or any other natural sweetener
- Pretty simple – Mix it all together in a large pitcher & serve over ice!
We had enough to make two batches which still isn’t going to last us very long because it’s so tasty and hits the spot every time. We enjoyed a glass served on shaved ice made in our Margaritaville which made it extra refreshing and satisfied two of my pregnancy cravings in one glass. Perfection!
